Kaylene’s Beef Roast: A Cozy Twist on a Classic Mississippi Mud Roast

As the days get shorter and the air starts to get that familiar crisp, there’s nothing quite like gathering around the table for a warm, hearty meal with the family. Fall always makes me feel that urge for cozy dinners that warm the body and soul, and this Beef Roast is exactly that kind of dish. It’s my spin on the classic Mississippi Mud Roast, with a few tweaks to suit my taste and a deep, savory flavor that is perfect for cool, crisp evenings.
Fall has always been my favorite season. Growing up, it was a time for long weekends, family gatherings, and meals that brought everyone together. My version of this roast was inspired by those memories—the smell of a roast cooking all day, filling the house with warmth and delicious aromas. It's one of those meals that brings people closer, whether you're catching up around the table or simply enjoying the quiet comfort of a good meal at the end of the day.
The original Mississippi Mud Roast calls for ranch seasoning, but I’ve never been a fan of the tangy flavor it adds. I wanted something that leaned more into the rich, beefy flavors. So, instead of ranch seasoning, I swapped it out for a packet of Au Jus mix, which gives the roast a more robust and hearty flavor without overpowering the simplicity of the ingredients. The result is a deeply satisfying meal that’s perfect for slow-cooked fall dinners, whether you're gathered around the table or snuggled up on the couch with a bowl of beef and noodles.
You can serve it as a traditional roast with your favorite sides, shred it for delicious roast beef sandwiches, or even mix it with noodles. The buttery richness combined with the mild tang from the pepperoncinis adds just the right touch of warmth, while the Au Jus mix provides that hearty, beef-forward flavor that I love.

Kaylene’s Beef Roast
Ingredients:
1 beef chuck roast (3-4 lbs)
Beef broth or vegetable broth (enough to fill halfway up the roast)
1 stick of butter
1 packet of Au Jus mix
5-7 pepperoncinis (mild or hot, depending on preference)
2 tablespoons of pepperoncini juice
Salt, pepper, and garlic powder to taste
Instructions:
1. Prepare the Roast:
Preheat your oven to 350°F (175°C) if you’re using the oven, or set your crockpot to low heat if using that method. Place the beef chuck roast in a large pot or crockpot and pour enough broth (either beef or vegetable) to fill halfway up the side of the roast.
2. Add Flavor:
Place a stick of butter directly on top of the roast. Then, sprinkle the Au Jus mix over the roast and the broth for that deep, savory flavor. Add 5-7 pepperoncinis and 2 tablespoons of the juice for a tangy twist, then season with salt, pepper, and garlic powder to your liking.
3. Cook the Roast:
Oven Method: Cover the pot with a lid or foil and bake at 350°F for 4-6 hours, or until the roast is fall-apart tender.
Crockpot Method: Set your crockpot on low and let the roast cook for 8-10 hours, or until it's so tender it can be easily shredded with a fork.
4. Serve and Enjoy:
You can serve the roast as is, with your favorite sides like mashed potatoes or roasted veggies. Or, shred the roast and use it for hearty roast beef sandwiches topped with provolone cheese and extra pepperoncinis. If you’re craving a cozy bowl of beef and noodles, shred the roast and stir it into a pot of noodles, using the broth for a rich sauce.
